One of my most favorite things to bake {besides chocolate chip cookies} is to make breakfast casseroles!

I seriously have become obsessed with making all kinds of casseroles for breakfast lately. They are so easy and taste delicious! … and best of all, they can feed an entire family and is also a good breakfast casserole for feeding overnight guests or serving at events like a baby shower!

We had a lot of visitors over the summer, so I needed to have breakfast that could feed a crowd…but didn’t leave me in the kitchen for hours on end making food and then cleaning up.

That’s where these breakfast casseroles come into play. They are perfect!

Recipe Inspiration

Yesterday I woke up and wasn’t in the mood for putting together an elaborate spread for my family. I had to run my daughter to the horse farm for chores and my hubby had to run to the hardware store for drywall for our basement bathroom reno that we are in the middle of. So we had a busy morning with people everywhere!

On my way home from the farm, I had the idea of putting together a comforting breakfast casserole using canned biscuits and a variety of simple ingredients like eggs, cheese, and sausage.

I based this recipe off of my Christmas Morning Breakfast Casserole, which is one of my family’s favorite recipes.

Ingredients

You can easily add your own twist to this recipe by mixing in green onions, red peppers, or even ranch seasoning. The great thing about this dish is its flexibility!

  • canned biscuits – any brand will do. I used the store brand biscuits in the homestyle version
  • eggs – make sure they are at room temperature for the best consistency
  • milk – I always use whole milk, but any percentage milk will do
  • cheese – I used cheddar cheese and I always prefer to use finely shredded
  • sausage – breakfast sausage works best, but you can also try turkey sausage or add red bell peppers for extra flavor
  • salt & pepper – season to taste

Let’s Make It Together!

If you’re not a morning person, prepare this the night before for an easy breakfast recipe the next morning. If not, you can make this recipe and immediately put it into the oven to serve right away!

In a large skillet, brown sausage and set aside

On a cutting board, cut each biscuit round into 6 pieces, use a pizza cutter to easily slice the biscuit dough into small pieces. Layer the biscuit pieces in a greased 9×12 casserole dish or baking dish to create a fluffy biscuit base.

In a large mixing bowl whisk eggs

Add milk

Add salt

and pepper

Stir in cheese

Cook the breakfast sausage over medium heat in a large skillet until browned, then drain any excess grease with paper towels, then add to the egg mixture.

Pour half of the egg mixture on top of the biscuits

Layer the remaining biscuits on top of the egg mixture and then pour the remaining egg mixture. Bake until cooked all of the way through and golden brown

To ensure the casserole cooks evenly, set the oven temperature to 350°F and bake until golden brown. A lower temperature for a longer period of time ensures the biscuit dough is cooked all of the way through.

Store leftovers in an airtight container in the refrigerator, where they’ll stay fresh for 3-4 days.

This truly was a delicious and hearty breakfast casserole, making it a great way to start the day! It’s perfect for serving the whole family or for weekly meal prep. Equipment

  • 9×12 Pyrex glass baking dish

Ingredients
  

  • 1 store-bought canned Homestyle biscuits
  • 1/2 lb Jimmy Dean Original sausage
  • 5 eggs
  • 1 c milk
  • 1 c cheddar cheese shredded
  • 1 tsp salt
  • 1/2 tsp ground black pepper

Instructions
 

  • Heat oven to 350°
  • Brown 1/2 lb (1/2 of a tube) of Jimmy Dean Original sausage in a skillet. Set aside
  • In a large mixing bowl, whisk eggs
  • Add milk, cheese, salt, pepper and sausage
  • Cut each biscuit into 6 pieces and layer half of them on the bottom of a 9×12 glass baking dish
  • Pour half of the egg mixture over the raw biscuits
  • Layer the remaining biscuits on top of the egg mixture
  • Pour the remaining egg mixture over the biscuits
  • Bake 20 minutes or until the centers of the biscuits are cooked thoroughly

  • Store leftovers in an airtight container in the refrigerator, where they’ll stay fresh for 3-4 days.
