Tater Tot Breakfast Casserole with Sausage

This tater tot breakfast casserole is the perfect breakfast that can be made quickly on a busy morning or a weekend of enjoying a stress-free morning. This casserole is loaded with tater tots, sausage, cheese and eggs. 

You all know I love quick and easy recipes! Our weekends are so busy with soccer and church that I have to be quick making breakfast. I love making casseroles like sausage & egg casserole or this crescent roll casserole that you stick in the oven and do other things while you wait for it to bake!

This quick and easy casserole is the best tater tot casserole recipe with cheddar cheese and sausage and has quickly become a family favorite.

I was able to make this recipe so quickly because I had frozen tater tots in my freezer. You literally bake this casserole with the tots frozen, which is so time-saving and doesn’t require a lot of planning ahead of time!

Another reason I love this casserole so much is because it does not use a can of cream of mushroom soup, something I don’t always have on hand in the pantry. This recipe uses kitchen staples like eggs, milk and seasonings!

How To Make A Tater Tot Breakfast Casserole

What You Need:

Pyrex mixing bowl

Skillet pan

Hand whisk

8×8 casserole dish

The Process:

Place frozen tater tots in the bottom of the casserole dish and bake at 350˚ F and bake for 10 minutes until they are no longer frozen

In the meantime, cook sausage links in a skillet

In a mixing bowl whisk eggs and milk

Add in ground mustard

Dice sausage into 1/2″ pieces

Pour all ingredients over top tater tots and top with cheese

Bake and enjoy!

Add some spice with a little bit of Tabasco Sauce!

Ingredients
  

  • Tater tots Tater tots – enough to cover an 9×9 casserole dish
  • 3 eggs whisked
  • 1/4 c milk
  • 6 breakfast sausage links cooked and diced into 1/2" sized pieces
  • 1/2 c shredded cheddar cheese

Instructions
 

  • Preheat oven to 350˚ F
  • Place frozen tater tots in casserole dish and bake for 10 minutes
  • Cook sausage links and dice
  • Whisk eggs together with milk, add sausage and cheesePour egg mixture over tater tots and bake for 20-25 minutes *time may vary depending on your oven. Check the middle of the dish frequently with a fork.

Can you freeze leftover tater tot casserole?

Yes, you can freeze this tater tot casseole. Wrap the casserole tightly in plastic wrap or freezer paper and then place in either an air-tight container or a Ziplock freezer bag.

When ready to use, remove from freezer the day before and allow to thaw in the refrigerator.

What can I substitute the sausage links with?

You can substitute the sausage links with ground sausage, ground beef, ground turkey or mixed vegetables of your choice.
