Creamy Avocado Dressing
- Peel and pit avocado
- Place all ingredients in a food processor and blend until the ingredients have reached a creamy consistency
- Chill in refrigerator until ready to use
I love salads that are loaded with non-traditional salad ingredients. The plain ol’ lettuce, tomatoes, cucumber salads and carrot shreds remind me of the salads my mom made growing up. She loved them! I on the other hand, like more “weird” ingredients as my mom says! 😂

That’s how this salad came to be! I was craving a healthy option for lunch one day so I looked in my refrigerator to see what I could come up with! I stumbled upon some leftover steak, lettuce and an avocado!
