Strawberry Blueberry Waffles
Whip up a batch of these homemade strawberry and blueberry waffles! Perfectly fluffy and packed with fresh berries, quickly made in a waffle iron. They are perfect for a family brunch or a cozy morning treat.

Recipe Inspiration
When my kids were younger, before they were in school, they used to help me in the mornings by making homemade pancakes. I have so many fond memories of their floured little hands carefully trying to stir the batter or crack the eggs.
The recipe that I have been using for pancakes for almost 20 years is from my college roommate’s mom. Our entire women’s cross country team went to her house one time for a pancake breakfast. Honestly, up until this point, I truly never liked pancakes (my mom always made the boxed mix stuff) but these were so good. So fluffy and not oily!!

The great thing about these pancakes, is that the same exact batter recipe can be used for waffles!! I love that because I have this recipe memorized so I can whip these up in no time at all! Just pour the batter into a waffle iron and wa-la!
Waffles and pancakes alike, can be loaded up with various toppings and fillings. Today’s recipe features fresh strawberries and blueberries that we had picked on a family outing years ago when we lived in South Carolina (p.s. these photos are from 2011! The joy of going through old memory cards!…oh be still my heart!)

Let’s Make Them Together!
Ingredients
- unbleached all-purpose flour
- baking powder
- granulated white sugar
- large egg
- vegetable oil
- salt
- whole milk

Step By Step
- Wash blueberries and strawberries. Trim strawberry stems and cut into small pieces, about the same size of a blueberry
- Prepare the batter in a bowl
- Heat a waffle iron, spray with non-stick vegetable spray. Spoon in batter and top with fresh berries
- Close and cook until done (each waffle iron is different on how long it will take)

Serve with whipped cream and syrup and enjoy!! Everyone loved them!

Ingredients
- 1 1/4 c all-purpose flour
- 1 tbs granulated sugar
- 1 tbs baking powder
- 1/2 tsp salt
- 1 c milk whole milk
- 1 egg
- 1/2 tbs vegetable oil
- 1/2 c strawberries
- 1/2 c blueberries
Instructions
Prepare Fruit
- Wash blueberries and strawberries. Trim strawberry stems and cut into small pieces, about the same size of a blueberry
Waffle Batter
- In a small bowl, mix all of the dry ingredients together
- In a large bowl mix together wet ingredients
- Incorporate wet mixture into dry mixture
- Heat a waffle iron, spray with non-stick vegetable spray. Spoon in batter and top with fresh berries
- Close and cook until done (each waffle iron is different on how long it will take)
