I had bought a big bag of kale for my 7 ingredient cuppa toscana soup and had a bunch leftover so I decided to make a kale salad out of ingredients I already had at home. It was just the right amount of zesty and tangy mixed together!
I’ve got to admit, that I don’t always like kale salad. The kale leaves can be too hard and chewy, and pretty tasteless. However, there isa key to making your salad taste great – you have to massage the leaves with the salad dressing! Yes, you read that right! It’s so weird but it is literally the magic trick!

The salad dressing is a mix of honey and red wine vinegar – so good!
- 1 bag fresh kale, chopped
- 1 cup almonds, slivered
- 1 cup dried cranberries
- ¼ cup sunflower seeds
- 2 tbs red wine vinegar
- 3 tbs vegetable oil
- 2 tbs honey or agave
- salt and pepper to taste
- Place kale in large serving bowl, add red wine vinegar and vegetable oil.
- Massage the vinegar and oil into the kale with your fingers.
- Add remaining toppings and serve.
