A quick and easy, hearty breakfast that serves a crowd!

One of my most favorite things to bake {besides chocolate chip cookies} is to make breakfast casseroles!

I seriously have become obsessed with making all kinds of casseroles for breakfast lately. They are so easy and taste delicious! … and best of all, they can feed an entire family!

We had a lot of visitors over the summer, so I needed to have breakfast that could feed a crowd…but didn’t leave me in the kitchen for hours on end making food and then cleaning up.

That’s where these breakfast casseroles come into play. They are perfect!

Yesterday I woke up and wasn’t in the mood for putting together an elaborate spread for my family. I had to run my daughter to the horse farm for chores and my hubby had to run to the hardware store for drywall for our basement bathroom reno that we are in the middle of. So we had a buys morning with people everywhere!

On my way home from the farm, I had the idea of putting together a casserole using store-bought canned biscuits. So I stopped by the store on the way home and then got busy baking the most scrumptious breakfasts I have ever made!

Ingredients

  • canned biscuits – any brand will do. I used the store brand biscuits in the homestyle version
  • eggs – I always use free-range eggs from the store … if I don’t have enough eggs from our own chickens!
  • milk – I always use whole milk, but any percentage milk will do
  • cheese – I used cheddar cheese and I always prefer to use finely shredded
  • sausage – my favorite brand of breakfast sausage is Jimmy Dean Original
  • salt & pepper – season to taste
