Kale & Egg on Whole Wheat English Muffin
I’ve really been trying to eat “healthier” lately (aka cutting out the Annie’s Cheddar Bunnies and other gagillion kid snacks I was eating daily) and trying to make sure I get a tad bit closer to eating the required servings of fruits and veggies (I am still a REALLY long ways away!) With that said I had bought a head of Kale the other day in hopes to find a few ways to eat it.
One of the ways I came up with was for breakfast…and it was sooo good! Forget the bacon folks, go grab you some kale! 🙂 I’m serious, this was really really good. In fact, I want one now!!





Recipe: (1 Serving)
-1/2c fresh chopped kale

-1tsp EVOO
-1 garlic clove
-1 egg
-1 tsp shredded cheddar cheese
-1 whole wheat english muffin
Saute kale in EVOO and garlic, about 5-7 minutes. Remove kale and cook egg, season with S & P. When you flip your egg add cheese and let melt while egg finishes cooking on second side. In the meantime, toast english muffin in toaster. Once everything is done cooking, assemble. Enjoy!

Yum! What a delicious and healthy looking breakfast. I love Kale…I often make Kale chips which are DELICIOUS! And are a healthy way to satisfy a salty craving.

That looks really good…and filling. I am trying to make healthier choices as well. When I read this Mom’s Guide (http://www.1dental.com/moms-guide/) it made me reflect on what I was feeding my son. So much sugar and processed food. Then I realized – I am the one choosing those foods for him and can do something about it. Thanks for the recipe!
I have just spent about 30 minutes looking at all your recipes, and this is definitely one that I am going to try later on this week. I also really like Kale chips and wouldn’t mind trying them soft and layered in between english muffins (yum) and cheesy fried eggs (double yum)!
