Blueberry Cheesecake Ice Cream
As I mentioned in my last post, we went blueberry picking and brought home two gallons worth of those yummy little buggers. Saturday night I made Blueberry Cheesecake Ice Cream. All I have to say about it is OH.MY.GOSH!!! Hello! It is soooo good! You need to make some ASAP! I’m serious! You will be so glad that you did!
Want to make some too?
Mix together until creamy
In a medium saucepan heat 3c 2% milk & 1c half-and-half
Cover and bring to a boil
Remove milk mixture from heat and gradually add in the cheese mixture
Stirring occasionally, cover the pot with the lid again and heat over medium heat
Heat to 160 degrees (mine got a tiny bit hotter)…I was busy watching a movie, lol
Place the milk/cheese mixture in a big bowl of ice. Let sit until temperature cools
Rough chop 3c blueberries (I cut mine each in half)
Place blueberries, 1/4c powdered sugar and 1/4c water into a saucepan and…
bring to a boil

Once the milk/cheese mixture is cooled add in the blueberries
Pour into freezer bowls
In half of the mix (one bowl) I added in crumbled graham crackers (half of one whole cracker)
I used a knife to just barley stir it in
Stick in freezer. After it froze I placed it into sealable freezer containers…if you don’t have freezer bowls just skip this part because really all it did was create extra dishes for me to wash…sigh
Look who I caught sneaking around…someone couldn’t even wait to scoop it into a dish…he ate it right out of the freezer container!

You can find the handy dandy recipe that I used at myrecipes.com. The only problem that I had with their recipe was that it said to only add half of the milk mixture…and never said where to add the other half. So I made the decision to add it all in to the cheese mixture at once when I made my batch. Let me know if you make it and have any questions!
If you guys have fresh blueberries laying around I beg you to make this! It was sooo good! We’ve shared with several friends so far and they have all loved it! If you do make this come back and leave a comment on how it turned out!
**Note: If you do not want the actual blueberries in the ice cream (ie: shells and seeds) then after you boil them, drain them in a colander and discard the remains. Follow these tips here for the Blueberry Ice Cream I made and here for the Blueberry Butter I made
