Flourless Monster Cookies

These flourless and gluten free monster cookies are so deliciously thick and chewy! They’re filled with oatmeal, peanut butter, chocolate chips and colorful M&Ms. The dough prep only requires one bowl and can be easily refrigerated or frozen until ready to bake.

When I was in high school, I had the privilege of having amazing church Youth Group leaders. A married couple who Mae us think, question our beliefs, get into the Word and who was not afraid of showing affection. They really had the hearts of a servants and took time out of their own busy lives with 3 kids and spent it with us crazy high school kids each week and during each summer as they drove us hundreds of miles to go serve on mission trips in various states across the country. On many of those trips and our weekly meetings, Sally, would bring homemade monster cookies that were loaded with amazing goodness and we would all devour them in seconds!

At my wedding shower, part of my gift from Sally was a laminated recipe card with her amazing monster cookies. I was recently going through my old recipes and came across the recipe card and then a few weeks later a former youth group friend posted on Facebook that she was making Sally’s cookies. So I knew I needed to make them myself and share them with my kiddos!

I love these cookies because they do not have flour!! Yes, you read that correctly, they are FLOURLESS monster cookies! In place of the flour, there is oatmeal. I love that these monster cookies use oatmeal because they have a considerable amount of less carbohydrates. And if you’re trying to watch how many carbs you eat, oatmeal is a better alternative. 1 cup of instant oatmeal has 54 grams of carbohydrates whereas 1 cup of all purpose flour has 88 grams of carbohydrates.

These flourless monster cookies are super easy to make but they do make quite a lot of cookies. I prefer to make the whole batch, but only cook half of the cookie dough and then save the rest. Any extra cookie dough can be saved in the refrigerator for up to 3 days in a seal tight container or in the freezer for several months.

Flourless Monster Cookies Recipe

INGREDIENTS:

1 cup packed brown sugar

1 cup white sugar

3 beaten eggs (can substitute with 3 bananas)

1 stick margarine, softened

1 tablespoon vanilla

1 1/2 cup peanut butter

2 teaspoon baking soda

4 1/2 cups oatmeal, instant

1 cup chocolate chips

1 cup M&Ms

1/2 cup pretzel or peanut butter M&Ms, optional

PROCESS:

Mix first 7 ingredients well in a stand up mixer. Add rest of the ingredients. Drop by spoonfuls onto ungreased baking sheet. Bake at 350° F for 12 minutes or until slightly brown. Let stand on cookie sheet for 2 minutes before removing. Enjoy!
