Fried Eggplant with Spaghetti

Fried Eggplant with Spaghetti

  • 1 eggplant sliced thinly
  • Milk (I used soy milk during our 1 week of veganism)
  • Plain bread crumbs
  • Italian seasoning (optional)
  • Salt & Pepper to taste
  1. Heat skillet with EVOO
  2. Slice eggplant very thin
  3. Dunk in milk and then coat in bread crumbs on both sides
  4. Place in skillet and cook until brown on both sides (about 5 minutes). Season with S&P
  5. Serve over spaghetti noodles and your favorite sauce
