Spaghetti with Fried Eggplant and Tomato Sauce Recipe
In a skillet, light fry in oil thin slices of eggplant that have been coated with breadcrumbs and Italian seasoning. Serve with cooked spaghetti pasta foods and homemade 8 ingredient spaghetti sauce.
I love eggplant with spaghetti. It’s such a comforting dish, especially on a cold night!

Fried Eggplant with Spaghetti |

Ingredients
- 1 eggplant sliced thinly
- Milk (I used soy milk during our 1 week of veganism)
- Plain bread crumbs
- Italian seasoning (optional)
- Salt & Pepper to taste
Instructions
- Heat skillet with EVOO
- Slice eggplant very thin
- Dunk in milk and then coat in bread crumbs on both sides
- Place in skillet and cook until brown on both sides (about 5 minutes). Season with S&P
- Serve over spaghetti noodles and your favorite sauce
