Spaghetti with Fried Eggplant and Tomato Sauce Recipe 

In a skillet, light fry in oil thin slices of eggplant that have been coated with breadcrumbs and Italian seasoning. Serve with cooked spaghetti pasta foods and homemade 8 ingredient spaghetti sauce.

I love eggplant with spaghetti. It’s such a comforting dish, especially on a cold night!

Fried Eggplant with Spaghetti

Ingredients
  • 1 eggplant sliced thinly
  • Milk (I used soy milk during our 1 week of veganism)
  • Plain bread crumbs
  • Italian seasoning (optional)
  • Salt & Pepper to taste
Instructions
  1. Heat skillet with EVOO
  2. Slice eggplant very thin
  3. Dunk in milk and then coat in bread crumbs on both sides
  4. Place in skillet and cook until brown on both sides (about 5 minutes). Season with S&P
  5. Serve over spaghetti noodles and your favorite sauce
