Day 1: Eating Vegan

This morning I woke up and was really pumped about our committment to eat Vegan for one week. (Note: we’re eating Vegan and most importantly knocking out processed foods, etc.) It may seem dramatic and like a far fetch idea/goal but I need to be dramatic to be able to make such a big change for one week!

Because of the holiday, Lover Boy was home today so we got to do our first day together! We had a great time goofing around, teasing each other as well as fight off our normal food cravings (me=sugar, sugar, sugar. LB= a big juicy hamburger!)

I can honestly say that today wasn’t “that bad”…maybe I should be worried for day 2 and 3! I felt full and satisfied most of the day. My only weak point came around 4pm when we ran out to Home Depot. I was cold (it was 59º today!) and really needed some sugar (after a day of reflecting I realized that I really really consume a lot of sugar on a daily basis!) So, because I am not doing this to be miserable, eat nasty food, etc. I shared a soy (venti…opps!) Tazo Chi Tea Latte with Lover Boy (first time I ever ordered soy!) It worked.

For dinner tonight we both were still full from lunch but because our brains have been thinking about what food we’re not eating for a week we both were craving a big juicy hamburger! Good thing we had each other to joke around with to pull ourselves past this craving! 🙂

We loved breakfast and lunch. In fact LB said that he really loved lunch and was so proud of me for getting him to like something without meat! (yeah me!) 🙂 However, the quinoa for dinner was just OK. I don’t exactly know what I think about it. It wasn’t bad but wasn’t super yummy.

Excited for day 2!!
