Day 2: Eating Vegan
My week-long journey of eating vegan. Recipes for Homemade Hummus with Sliced Pitas, Black Bean & Kidney Bean Burgers and homemade fries
As I kind of expected day 2 kind of sucked. Well, I suppose it wasn’t bad until dinner. I made black bean & kidney bean veggie burgers and honestly they were just not good…because in the moment, when you’re expected a meat burger, this just didn’t cut it.
Sure, if I had never had a burger before I would have enjoyed these, but yeah, that wasn’t the case. The good thing is though Lover Boy and I have really been having fun with this whole thing.

Honestly I have almost pee’d my pants like 27 times because of laughing so hard. My husband is so comical and full of sarcasm that I just can’t help myself. I haven’t laughed this hard in years…probably when we were at our old house in GA and started tackling way too many projects at once and laughing was all you could do to keep from crying! (before kids) – I would do this week of veganism again simply because LB and I are really reigniting our fun sides!
Anyway, here are the meals I made for day 2: (sorry it didn’t post yesterday, I’m having difficulty still with uploading my photos and working on the blog overhaul so please bear with me!) **Click the recipe names for the recipes!
Breakfast: Quaker Oats Instant Oatmeal and a banana – Little Finch has preschool on Tuesdays/Thursdays so those mornings are way too hectic to try to make something!
Lunch/Snacks: (I really can’t remember what else I really ate!)

I have to agree with you. The burger doesn’t look the most appealing. It’s so good that you two are making the best of your experiment! And I have to say I LOVE,LOVE,LOVE the blog! It looks so cute and fun. I am sure it has been a lot of work and take some time to get used to. But great job so far.:)
