Blueberry Butter

I recently saw a fruity butter recipe on Pioneer Woman. Ree’s pictures make the butter look sooo good! This morning Little Finch and I decided to make our own version of fruity butter, Blueberry Butter. We chose to boil the blueberries before in order to remove the shells/seeds to make it more kid friendly. My pictures show the way we made it, however, after spreading it on a english muffin I decided to go back and add a bit of sugar to give it more of a sweet kick. I’ll show you were you can add in the sugar if you like.

Blueberry Butter

 

In a medium saucepan add 1c blueberries, 2tbs water and *1/4c sugar (pretend that the sugar is in there)
Cover and bring to a boil
Place colander into a bowl and drain blueberry mixture
Use a spoon and really squish out all of the juice. Toss the blueberry remains away
You should have a bunch of juice like this
Mix up one stick of butter until creamy
Gradually add in the blueberry juice
And mix again!
Place the whole fluffy chunk of butter on a piece of clear wrap
And roll it out...kind of like a snake
Then wrap in foil and stick in the fridge (or if you are impatient like me and need it for breakfast in T-minus 2 minutes, stick it in the freezer to speed up the cooling process)
Spread on a toasted english muffin and enjoy!

Ingredients:

-1c blueberries

-2tbs water

-1/4c sugar

-1 stick butter

This is just a fun way to switch things up in the morning…and one more way to use all of those blueberries! 🙂 Have a great day!
