Taco Supper Skillet

The Taco Supper Skillet recipe is a quick and easy one-pan meal that includes ground beef, taco seasoning, kidney beans, corn and noodles. This dish is cooked in a dutch oven. Add additional toppings such as cheese, sour cream, and avocado.

While looking around my kitchen to see what I had laying around to make for dinner yesterday I found:

1) A bit into tomato (by my son)

2) Half a bag of corn

3) A little bit of sour cream

4) A half pound of frozen ground beef

I remembered a recipe I had pinned from Betty Crocker called Taco Supper Skillet, it just so happened to feature all of the ingredients I had found…I had to run to the store to grab a can of kidney beans and taco seasoning but that was it. The rest I had on hand.

I quickly made the dish and we all loved it. The kids “ate a mess” out of it (I love me some southern sayin’s!) 🙂

Here’s how you make it!

Start by browning your beef in a large pot or dutch oven. Drain any excess fat

Grab your mauled to death pack of taco seasoning (Laughing Coyote had a blast throwing this out of the shopping cart 392 times during our 5 minute trip to the store!) You can also make your own seasoning if you prefer…I was feeling lazy.

Add the taco seasoning mix to the beef

Add in 2 ¼c of water and stir

Add 1 ½c uncooked noodles (the thicker the better)

Add 1 ½c frozen corn

Add 1 can drained kidney beans

Cover your pot and bring to a boil. Once it starts to boil turn it down to medium heat and cook for about 15 minutes, until your noodles are ready

Mmm…almost done!

Add 1c sour cream…or if you’re like me whatever is left in the container (about ¼c)

Like I said, everyone loved this…and the kids ate the veggies. ALLELUIA!!! Lover Boy said it reminded him of a different meal that I had made before that tasted similar to this (he referred to it as the best thing I had ever made). I am clueless! I have no idea what he’s talking about…guess it’s time for me to go browsing on this here ol’ blog and see if I posted it before! 🙂 Wish me luck!

  2. I made this last night. It was really tasty.

    I did not have kidney beans, although I swear I purchased them at the store the other day. Instead I used canned gandules beans (pigeon peas). I also added a can of drained rotel when I added the corn and beans and omitted the fresh tomatoes. Then, I topped with shredded cheese. 🙂 It was yummy. I even cheated on my diet to eat a plate.
