Grilled Shrimp, Pineapple & Mango over Rice

The other day I had totally put off making dinner until the last minute! I don’t know why but I just hadn’t taken the time to figure out what to make. So as Lover Boy was on his way home from work I asked him what he wanted. Together we came up with grilled shrimp and fruit. I quickly ran to the grocery store, bought what we needed and came back to make a super quick, easy and tasty dinner.

Grilled Shrimp, Pineapple and Mango over Rice

Lets make some together. Here’s what you need:

Fresh shrimp (peeled & deveined), pineapple chunks, mango chunks, ginger teriyaki sauce and rice

**Start cooking 1/2c of rice per person. I used Instant Rice because I needed dinner to be done pronto! (sorry no pictures of the rice cooking!)

Soak the shrimp in enough ginger teriyaki sauce to cover them for about 10 minutes (or if you have more time, even better and congratulations on not being a procrastinator!)
Cut up the mango about the size of the pineapple chunks. Arrange shrimp, pineapple and mango on skewers and place on grill over medium high heat. Leave on until shrimp is cooked
So quick and easy! And tastes sooo good!
