Recipe Inspiration

We are in the stage of life of “our kids are living their best lives!” 😂 Between the three of my kiddos, none of which can drive yet, I find that I am an unpaid taxi driver at all times of the day. Between horseback riding, baseball, basketball, golf, track & field, and a thousand other commitments, I truly spend a lot of time in the car.

On the multiple days that we have baseball, we have to travel to a town 20 minutes away – which is not bad by any means, but the timing of the practices isn’t always the most convenient, therefore, I find myself swinging through the Panera Bread drive through more often than I’d like to admit…to feed starving teenagers who have a bottomless pit for a stomach all of a sudden. (This is a phase I never imagined actually happening despite all of my older friends assuring me it would! haha)

My son’s favorite meal from Panera Bread was their flatbread pizza, mine is Copycat Panera Autumn Squash Soup. But just this past week, as my husband took him through the drive-through after practice, they called me to tell me that the menu changed and they got rid of flatbread pizza.

So, as any good mother would do, I got busy researching how to make flatbread pizza at home! To my surprise, it is WAY easier than I would have ever imagined! … and the best part, it can be made within 10 minutes of mixing in the yeast! Woot! Perfect for a quick and easy weeknight meal…at home!!!

Ingredients:

  • bread flour – use a flour with a high gluten percentage. Mine was 12.7%
  • salt – coarse Kosher salt
  • fast acting yeast
  • olive oil – I used extra virgin olive oil
  • water – tap water is perfect

How To Make Flatbread Pizzas

To make flatbread pizzas, follow the same steps as above for making the dough. The only difference is how the flatbread is cooked. In order to make this a pizza, place the dough on a pizza stone or a parchment lined baking sheet. Use a fork to poke holes all over the dough to help prevent the dough from filling with air bubbles when cooked. Preheat the oven to 475°F.

If using shredded mozzarella cheese, pre-bake the flatbread crust in the oven by itself for 4-5 minutes. Remove from the oven and then top with sauce, cheese and extra toppings. Place back in the oven and cook for an additional 5-9 minutes, or until your toppings are cooked how you prefer them.
