Grilled Pork Chops with Tomatoes and Melted Muenster Cheese

Yesterday was our first full day home after being in Illinois. In between crabby tantrums from the kiddos (recuperating from the 15 hour drive the day before) and loads of laundry I decided to bail out on making dinner. Lover Boy called on his way home from work and said that he would take over and surprise me. I’ve told you before that he was the only one who cooked in this house until a year ago. But since I’ve been a stay-at-home I’ve taken over since I really don’t have a good excuse not to cook. I knew the meal would be good because he is so good at thinking outside of the box when it comes to cooking.

I didn’t take pictures of the process because I was busy being lazy watching TV! 🙂

Grilled Pork Chops topped with Tomatoes and melted Muenster garnished with Green Onions

Pork Chops: Lightly rubbed with EVOO. Season to taste with parsley and fresh ground pepper and sea salt. Grill until cooked all of the way through

Tomatoes: In a medium-hot skilled heat slices of tomatoes topped with slices of Muenster cheese. Top with chopped green onions

Garden Veggie Pasta with Pan Seared Peppers

Garden Veggie Pasta: any boxed garden veggie pasta. Cook according to directions

Pan Seared Veggies: Heat EVOO in a skillet until really hot. Place slices of green and red peppers and sear (almost like you’re burning them). *Don’t let them get mushy!

Mangos and Applesauce

Serve with slices of fresh mango and applesauce
