Easy Carrot Brownies for Easter (Made with Boxed Brownie Mix!)

I made these cute little carrot brownies for my weekly food tutorial video on Foodtalk, and I just love how they turned out! They’re seriously so easy to make—most of the ingredients are store-bought, so it’s a great last-minute dessert idea if you’re short on time but still want something festive and fun.

They’re perfect for spring, especially Easter! I actually paired them with my Easter Bunny Ear Cupcakes for a sweet little dessert spread, and they looked so adorable together. These brownies would be great for a party, a classroom treat, or just a fun baking project to do with the kids.

You can totally get creative with the decorations or keep it simple with orange frosting and cute little green chocolate “stems.” Either way, they’re bound to be a hit!

Ingredients You’ll Need

Ghirardelli brownie mix, Pillsbury white frosting, Wilton green candy melts, gel food coloring, and a finished carrot brownie displayed on a plate on a marble countertop. | Gathered In The Kitchen

How to Make Carrot Brownies

Step 1:
Start by baking your brownies. I used a box of Ghirardelli brownie mix and followed the directions right on the box. Pour the batter into an 8×8 baking dish and bake until done. Let them cool completely in the pan.

Step 2:
Once cooled, cut the brownies into three long rectangles. Then, using a sharp knife, cut out triangle shapes from each rectangle to look like little carrots. Gently remove each triangle and place them on a sheet of parchment paper.

Step 3:
Scoop some vanilla frosting into a bowl and tint it orange with gel food coloring. Once you’ve got that bright carrot color, spoon the frosting into a piping bag and pipe it onto each brownie triangle in a thick, swirly pattern.

Step 4:
Now for the “stems”! Melt your green candy melts in the microwave, stirring every 30 seconds until smooth. Dip the tines of a fork into the melted candy and press it gently onto parchment paper to make leafy shapes. Pop them in the freezer to harden.

Step 5:
Once the green chocolate stems are set, gently place one on top of each frosted brownie. And that’s it—you’ve got the cutest little carrot brownies ready to serve!

These carrot brownies were such a hit! They were incredibly easy to make with just a few store-bought ingredients, and everyone who tried them absolutely loved them. Not only did they look super cute, but they were also rich, chocolatey, and totally delicious—definitely a crowd-pleaser!…I really don’t want to admit how many of these I ate! 😬 #dietstartsmonday #browniesaremyweakness!
