Day 5: Eating Vegan

My week-long journey of eating vegan. Recipes for strawberry blackberry muffins with chocolate chips, vegan pizza and vegan chocolate cake with vegan icing.

Today I was thinking about cheese all day. It’s been 5 stinkin’ days since I last had cheese and it’s all I wanted! To make matters worse my just turned 22-year-old brother-in-law came to town to pick up a puppy he had bought while visiting for Christmas (the puppies were too young to go home then). So ideally, what do you do when you get together with your younger brothers? You go eat lots of pizza or loaded burgers! Well, that was out of the question so I had to improvise…and I’m not meaning veggie burger style. I ran to the store and bought veggie cheese! I hadn’t planned on eating the “fake” cheese this week but am so glad I finally caved…now I think I could quite possibly one day choose to eat vegan!

Breakfast: I had a bunch of strawberries and blackberries that needed to get eaten so I came up with this new muffin recipe that the kids love!

Dinner:

vegan pizza crust topped with vegan mozzarella cheese, red onions, tomatoes and olives

Dessert: Since my brother-in-law just turned 22 we wanted to celebrate with him…vegan style of course! Everyone really liked this cake! It’s very heavy though so Lover Boy called it the meatloaf of cakes. 🙂
