Banoffi Pie
A twist on a traditional pie crust pie. This is an easy pie to make with bananas, sweet and condensed milk and graham crackers! It’s a delicious dessert peppered with grated chocolate!
I’ve been attending a weekly bible study with my girlfriend at her church, and love it! We studied the book of Ruth, which I had read before and was amazed at her dedication to her mother-in-law, especially after her husband had died. But what really was encouraging was the fact that you never know how one decision will lead to so many other great things in life.
The study we used was by Kelly Minter, “The Living Room Series: Ruth. Loss, Love & Legacy”. Each week at the end of the study, Kelly shares a few recipes. As a group we signed up for individual recipes in the book – I had Banoffi Pie. Kelly ate this at the Hungry Monk Restaurant in England where it was created and let me tell you…it is awesome! A definite make again for group get-togethers, because otherwise I would be 1,000 pounds! It’s so sweet and the bananas in the recipe make it delicious!

- 1 1/2 c graham cracker crumbs
- 10tbs butter, melted
- 2- 14oz cans sweetened condensed milk
- 3 large bananas
- 1 1/2c heavy whipping cream
- 1/3c confectioner’s sugar
- 1tsp vanilla
- 1/2tsp powdered instant coffee
- freshly ground coffee or chocolate shavings
- -Mix graham cracker crumbs with melted butter and press mixture into 9″ pie plate. Bake for 5-8 minutes. Allow to cool (since no temperature was listed, I did not back it and it was fine)
- -Immerse the unopened cans of sweetened condensed milk in a deep pan of boiling water. Cover and boil for 3 hours, making sure the cans remain covered with water. (Add water as needed). Remove the cans from the water; allow to cool completely before opening.
- -Whip the cream with the sugar, vanilla and instant coffee until thick and smooth. Spread 1/3 of the toffee (sweet condensed milk) over the base of the crust. Slice the bananas and lay them on the toffee. Spoon another 1/3 of toffee over the bananas. Layer more bananas and more toffee. Finally, spoon or pipe on the cream and lightly sprinkle with the freshly ground coffee or chocolate shavings.
