Meatballs & Rice

One of my mom’s signature meals is Meatballs & Rice. I always looked forward to it for dinner because I just loved this dish! I made it last night and guess what?? My kids love it too! Which is a miracle because it has meat! They are actually eating the leftovers for lunch right now! 🙂 It is such a quick & easy meal that doesn’t take much time or money. Great for those times when you need a quick fix!

Meatballs & Rice

Here’s how you make it!

In a bowl mix together with your hands 1lb ground beef and 1/2 packet of Onion Soup mix
Any ol’ brand soup mix will do
Form into meatballs and fry in large skillet over medium heat. If they start to cook too fast on the outside (and the middle is not done enough) place about 1/4c of water in the skillet and cover with a lid. This will help cook the middle and not let the outsides burn, repeat as many times as necessary
Cook rice according to package and amount of servings you need
In a small saucepan combine 1 can Cream of Mushroom Soup & 1/2 can of milk. Heat until warm
I love it served with beans! Ahhh sooo yummy!

And there you have it! You can add in the whole packet of Onion Soup mix if you want, but we don’t like ours to be too onion-y. Give it a try sometime and let me know what you think of it!

-Sauce: Heat in a small saucepan 1 can Cream of Mushroom soup & 1/2 can milk.

-Rice: Serve meatballs over bed of rice and top with sauce

  2. Wow! Thanks so much for sharing. We all loved this & it was cheap, quick &best of all easy! My 12 year old daughter has started wanting to cook dinner, her name is Stephanie too:), and this is a great recipe for her. Easy enough to do by herself but still “real” food LOL. (aka not ramen noodles)

    1. Oh yay! You just made my day!! Love this! This was one of my very first things I ever made too…besides cookies and cupcakes! haha – It’s so easy and tastes really good! When I was in college this was probably what I made most! …especially since it reminded me of home (since it’s my mom’s recipe!) Really hope she enjoys making it and that you’re whole family will love it! 🙂
