Ice Cream Sundaes with Roasted Caramel Drizzled Pecans
After I made the Homemade Caramel Sauce I needed something to accompany it! In the freezer I found some pecans (Pea-cans for all you Southerners. P-kaans for all you Northerners). 🙂 *Side note: since we’ve lived in the South for all of our post school years now, Lover Boy is stuck in the middle. He says Pea-kaan’s…seriously! I guess he is a true “half back”…which they call us here! We moved from the deep south to up north a tad but didn’t go all of the way back to Yankee land. We’re just happily and blissfully and fatfully (wait, is that even a word?? NO! but it went with the rest of the words so just go with it!) living it up in the middle!
Anyway, weren’t we were talking about that caramel sauce? Ya’ll just get me distracted with those pe-caans. OK, OK…so I pondered like I’ve never pondered before and decided to fry up those p-kaans…well the Yankee way: roast them. So I lined a baking sheet with wax paper and sprayed it with oil, arranged the pecans in single file lines like they were in the St. Charles (East, yo!) drum line and smothered them with that ooey gooey caramel sauce!

Then I stuck them in the oven at 350 degrees for 7 minutes. Then I excavated some vanilla ice cream, plopped it into an oversized bowl (that’s the way we roll around here…or should I say, that’s the way we became rolly polly’s around here?!?!) tossed in the caramel roasted pecans, drizzled chocolate syrup all over and added a strawberry on top (didn’t you know that eating 1 tiny piece of fruit cancels out 1,000 calories?! yep it does!)
