Katie’s Goat Cheese Scalloped Potatoes
Goat cheese scalloped potatoes are the most delicious homemade potatoes with a gourmet twist! They boast are rich and decadent flavor that leaves you craving for more! Goat cheese scalloped potatoes can be prepared ahead of time and make a wonderful side dish to any main course!

Before we moved away from North Carolina I asked a few close friends if they would want to get together and cook! One of my most favorite ways to remember someone is to honor them through food! Making their recipes helps me remember all of the wonderful times we had together and fills my belly {who is going to complain about that!?!}

My friend Katie, who I actually knew from college in Ohio, jumped on the opportunity and decided she wanted to make her dad’s recipe for “Bob’s Potato Gratin with Goat Cheese and Garlic”. I was so excited because the previous year, she and her sweet family spent Easter with mine at our house since we both lived so far away from family and this was the dish she brought! They went perfect with my Crock Pot Easter Ham , Celebration Salad and Sunrise Mimosas!

Katie and I were reunited one day at church. We were out on the playground after the service letting the kids play and she walked up to me and asked if she looked familiar to me. I immediately recognized her but was lost for a name until she said it! It was such a fun and crazy reunion because we lived in a small town in North Carolina a long way from Ohio!! So the chances of this happening were pretty slim! But it was such a great reunion and I am so thankful that we were able to spend time together catching back up and reminiscing about our college classes, teachers and adventure trip to the Smoky Mountains our senior year (we had a super cool major! Recreational Therapy & Occupational Therapy!) p.s. we did not plan to be twins…I guess, great minds think alike!

Gather your ingredients and utensils.

Using a potato peeler, peel the potatoes

Place potatoes one at a time in the food processor using a slicing disc. If you do not have a food processor with a disc slicer, you can very thinly slice your potatoes by hand using a sharp knife.

In a bowl combine milk and whipping cream

Minced garlic

Add salt and other spices

and goat cheese

Place a single layer of sliced potatoes in a 9×12 casserole dish

Ladle in a enough milk mixture to cover the potatoes

Repeat the layering and ladling process until all of the potatoes and milk mixture have been used. Bake and set aside to cool when removed from oven.


Serve alongside any main course or enjoy with a cup of coffee!


Goat Cheese Scalloped Potatoes
Equipment
Ingredients
- 1 c whole milk
- 1 c whipping cream
- 1 c goat cheese, soft & crumbled (about 5oz)
- 1 garlic clove, minced
- 1 1/2 tsp salt
- 1/4 tsp ground black pepper
- 1/8 tsp ground nutmeg
- 2 lbs Yukon Gold potatoes, peeled & thinly sliced
Instructions
- Preheat oven to 400 degrees F
- Peel potatoes
- Thinly slice potatoes either by hand or in food processor with disc attachment
- In a large bowl combine the remaining ingredients
- Place a single layer of sliced potatoes in a 9×12 casserole dish
- Ladle milk mixture over potatoes, enough to cover them
- Repeat layering and ladling process until all of the potatoes and milk mixture have been used
- Bake at 400 degrees F for 1 hour 15 minutes
- Remove from oven and let rest for 15-20 minutes

These goat cheese scalloped potatoes are on my Easter menu again this year! Although I won’t be with Katie to celebrate Easter, I will be reminiscing about all of our memories while I bake and eat these on our 1st Easter in Wisconsin.
