Ingredients
  

  • 1 c whole milk
  • 1 c whipping cream
  • 1 c goat cheese, soft & crumbled (about 5oz)
  • 1 garlic clove, minced
  • 1 1/2 tsp salt
  • 1/4 tsp ground black pepper
  • 1/8 tsp ground nutmeg
  • 2 lbs Yukon Gold potatoes, peeled & thinly sliced

Instructions
 

  • Preheat oven to 400 degrees F

  • Peel potatoes
  • Thinly slice potatoes either by hand or in food processor with disc attachment
  • In a large bowl combine the remaining ingredients
  • Place a single layer of sliced potatoes in a 9x12 casserole dish
  • Ladle milk mixture over potatoes, enough to cover them
  • Repeat layering and ladling process until all of the potatoes and milk mixture have been used
  • Bake at 400 degrees F for 1 hour 15 minutes
  • Remove from oven and let rest for 15-20 minutes
