Grilled Cheese with Spinach & Tomatoes
Grilled cheese made in a George Forman panini maker with spinach and tomatoes.
This morning we had Laughing Coyote’s one year check up, shots and all. He was such a trooper and tough guy. I was so proud of him. Four shots and one blood draw…that’s a lot for a little kid and he did great! However, we got home at 1:30pm and needed a quick lunch. I haven’t gone grocery shopping in a while so our selection is down to slim pickin’s. I settled on grilled cheese sandwiches with a twist.
Lets make it together!
Little Finch and I LOVED this! I know Laughing Coyote will too…when he wakes up! He tends to be really sleepy after shots! 🙁

This looks delicious! A great way to use some of the tomatoes that are going to start turning red anyday! (I am hoping) Thanks for sharing!
How wrong is it to snarf one of these down at 8am???
Grilled cheese and tomato is one of my all time favorites- I’ll have to try it with spinach next time. I have a similar panini press we use all the time- don’t you just love sandwiches made that way!
I just found my lunch! Thank you for sharing! I have made grilled cheese with roasted red peppers, eggplant and cucumbers for some crunch but never spinach – and that is my fave. Love the inspiration! xoxo michele
