This morning we had Laughing Coyote’s one year check up, shots and all. He was such a trooper and tough guy. I was so proud of him. Four shots and one blood draw…that’s a lot for a little kid and he did great! However, we got home at 1:30pm and needed a quick lunch. I haven’t gone grocery shopping in a while so our selection is down to slim pickin’s. I settled on grilled cheese sandwiches with a twist.

Little Finch and I LOVED this! I know Laughing Coyote will too…when he wakes up! He tends to be really sleepy after shots! 🙁

    Grilled cheese and tomato is one of my all time favorites- I’ll have to try it with spinach next time. I have a similar panini press we use all the time- don’t you just love sandwiches made that way!

  4. I just found my lunch! Thank you for sharing! I have made grilled cheese with roasted red peppers, eggplant and cucumbers for some crunch but never spinach – and that is my fave. Love the inspiration! xoxo michele
