Shrimp Dip/Sandwiches

I love shrimp. I love it fried, baked, sauteed, boiled, you name it, I love it. However, I only eat shrimp down at home in the South. When we go back to Illinois to visit our family and go out to dinner, I refuse to order it. Why? It’s missing that fresh taste. Living so close to the coast we are able to get fresh shrimp. The other night I had a craving for it but wanted to do something different. I made a baked dip and put it on french hamburger buns…yummy yummy yummy!

Shrimp Dip/Sandwiches

What you need:

Mozzarella Cheese, Artichokes, Fresh Shrimp (peeled and deveined) and Ritz Crackers
In a bowl combine the shrimp (1cup) and artichokes (drained)
Add in mozzarella cheese (about 1/2cup)
Crumble four Ritz crackers over the top of shrimp mixture
Bake in the oven at 375 for 20-25 minutes...make sure the shrimp is cooked all of the way through and the cheese is nice and melty
Serve on a french hamburger bun or on top of Ritz crackers

Also, if you are ever in the Savannah, GA area you NEED to go to Tybee Island (one of my most favorite places on earth) and eat at Cafe Loco. It looks like a weather beaten local hole in the wall but has the best food!! I absolutely LOVE it there! Check out this video and you’ll see why I am so obsessed with it!
