Hummus and Avocado Sandwich Recipe

These vegan hummus avocado sandwiches are the perfect healthy, quick and easy meal ready in under 10 minutes that even meat lovers will love! High grain toast smothered in hummus topped with slices of ripe avocado, tomatoes, arugula and a balsamic reduction.

Hummus Avocado Sandwiches

For Mother’s Day we went to one of our favorite locally owned farm-to-table restaurants in Davidson, North Carolina, The Pickled Peach. Typically I order the beet and honey goat cheese sandwich (omg it is ah-mazing!) but decided to copy my hubs and order what he ordered. He has been consciously cutting out meat and dairy from his diet and making healthier choices so he went with the white bean hummus sandwich and substituted out the mozzarella for avocado. We both loved the sandwiches so much that we’ve been making them at home now!

In all honestly, these hummus avocado sandwiches are so easy to make! Plus they are super filling and nutritious!

Ingredients

  • Bread – preferably a wheat or high grain bread
  • Hummus – I prefer the original/classic hummus, but you could do any of the “flavored” hummuses such as roasted red pepper, roasted garlic, etc. If you’re feeling overly ambitious, I would definite recommend making your own homemade hummus! This recipe is super delicious and way easier than you would expect!
  • Avocado slices – the more ripe the better!
  • Tomato slices – cut to about 1/8″-1/4″ and then seasoned with a little Kosher salt on top
  • Arugula – I refer to this as “fancy lettuce”. It has more of a earthy flavor with a bite. It’s delicious. Sometimes finding a package of just arugula can be difficult. I buy it as as a spinach and arugula mix at my local Walmart
  • Balsamic vinaigrette – I use a product like this balsamic reduction OR cherry tomatoes sliced, tossed in extra virgin olive oil with fresh basil and salt and pepper (this is actually my favorite way since making these a couple of times now!)

  1. Toast bread in toaster until desired doneness

  2. Spread hummus on top of one bread slice

  3. Add a thick slice of tomato seasoned with Kosher salt

  4. Top with arugula and drizzle with a little balsamic vinaigrette reduction
