Vegan Hummus Avocado Sandwiches

These vegan hummus avocado sandwiches are the perfect healthy, quick and easy meal ready in under 10 minutes that even meat lovers will love! High grain toast smothered in hummus topped with slices of ripe avocado, tomatoes, arugula and a balsamic reduction.

Hummus Avocado Sandwiches

For Mother’s Day we went to one of our favorite locally owned farm-to-table restaurants, The Pickled Peach. Typically I order the beet and honey goat cheese sandwich (omg it is ah-mazing!) but decided to copy my hubs and order what he ordered. He has been consciously cutting out meat and dairy from his diet and making healthier choices so he went with the white bean hummus sandwich and substituted out the mozzarella for avocado. We both loved the sandwiches so much that we’ve been making them at home now!

In all honestly these hummus avocado sandwiches are so easy to make! Plus they are super filling and nutritious!

Lets Make Them Together!

What You Need:

  • Bread
  • Hummus
  • Avocado slices
  • Tomato slices
  • Arugula
  • Balsamic vinaigrette OR cherry tomatoes sliced, tossed in extra virgin olive oil with fresh basil and salt and pepper (this is actually my favorite way since making these a couple of times now!)

Begin by toasting the bread in the toaster. Top with the rest of the ingredients and enjoy!

Once you’re done devouring these sandwiches, enjoy these vegan, paleo chocolate chip cookies and substitute out the eggs with bananas or applesauce or these vegan chocolate cake!
