Red Velvet Cupcakes Filled with Vanilla Pudding

Happy Day BEFORE Valentine’s Day!! I am refeaturing a recipe I wrote last year for my little girlie’s preschool V-day party. Red Velvet Cupcakes Filled with Vanilla Pudding…oh yeah! Sounds delish, doesn’t it?  i wanted to reshare the recipe with all of you in case you are still looking for a really yummy festive dessert for tomorrow!

Little Finch has a Valentine’s Day party at her preschool today so I volunteered to make cupcakes. Before I started cooking (last 2 years) I baked ALL.OF.THE.TIME! Filling cupcakes and cakes with pudding was something I started doing in High School on a whim. I love the way the pudding makes the inside nice and moist. Love these!

Here’s how I made them:

-Made red velvet cupcakes according to the box directions

-Made vanilla pudding according to box directions

-Poked small holes in the cupcakes and piped in vanilla pudding

-Frosted them with canned vanilla frosting

Then I topped them off with handmade heart cupcake toppers.

I’ll post the gifts to her classmates later!
