Grilled Caprese Zucchini Roll-Ups
These Grilled Caprese Zucchini Roll-Ups are the perfect portable, picnic food! Thinly sliced zucchini, tomatoes, mozzarella and basil on a stick!

Quick and easy meals that are also portable are sometimes a necessity for my family. Having three kids who are all involved in activities creates a very busy schedule for my household. Sometimes, rather than eating dinner late in the evening, I make healthy, utensil free meals that can be eaten on the go or in a picnic style. Grilled Caprese Zucchini Roll-Ups do the trick because they can be eaten hot or cold, require no silverware are tasty and nutritious all at the same time! Perfect for nights we have soccer!

These Grilled Caprese Zucchini Roll-Ups are actually super easy to make, even though they look kind of fancy! They are so easy that kids have a lot of fun making them! I get asked quite often if I teach cooking classes for kids. Of which, I do not. I always just tell people send your kids to my house and they can cook with my kids on a nightly basis. I think it’s so important to get kids involved in the kitchen (hence the blog name!) because often times kids, particularly picky eaters, end up actually liking what they make when you involve them in the food preparation. I know that some parents feel it’s more of a burden, hazard, mess, the list goes on, to have kids in the kitchen helping, but in all truthfulness, some of my most fond memories with my kids are of us cooking/baking together in our kitchen. It’s really like food for my soul…and who doesn’t love that?!? Plus, if I’m being totally truthful, I don’t want my kids to be idiots and not have a clue how to fend for themselves when they get out on their own, bahaha!
Alright, enough gibbering, lets get to the recipe, shall we?
Lets Make It Together!
Start by preparing your food in the correct cut sizes needed. Thinly slice your zucchini, slice your cherry tomatoes in half and tear off your basil leaves and mozzarella pearls.
Assemble your sticks or kabobs like so…
*Tip: the easiest way to do this is to place the toothpick in the CENTER of the zucchini strip, add the other ingredients and then fold over each end. I promise, it took me lots of trial and error to figure this out!

Once they are all assembled it’s time to add the seasoning!

Start by drizzling extra virgin olive oil over the roll-ups. (don’t do like I did in the picture..sometimes being a one handed photographer and cook is hard!)

Season with salt

and pepper

Place on the grill or oven at 400 degrees F.

Grill until slightly browned and tender, then remove.

Plate ’em up and serve!…or stick them in a to-go container and eat them in the car! ?? beep beep!
