Grilled Kale & Mozzarella on Pumpernickel
Allow me to introduce to you my kids new favorite sandwich…Grilled Kale & Mozzarella on Pumpernickel!! Yes, that’s right!! They all LOVES it! In fact, they have asked me to send the recipe to Rachael Ray!! haha so funny!

It is so easy to make and puts a healthy twist on the regular ol’ grilled cheese.
Here’s how you make it!
- 2 tbs butter
- A big handful of kale
- Fresh mozzarella cheese
- pumpernickel bread
- Heat butter in skillet
- Add kale. Cook until wilted
- Butter one side of each piece of bread
- Place butter side down, add mozzarella, top with kale, add more mozzarella, top with 2nd slice of bread
- Cook just like a grilled cheese – until cheese is melted and bread is slightly crispy
