Tomato Basil Bruschetta Recipe

This fresh tomato basil bruschetta is the perfect easy appetizer for those warm summer nights. Pair it nicely with a fresh squeezed lemonade or local bottle of wine and enjoy the savory flavors of tomatoes and basil infused with garlic and extra virgin olive oil over a crispy baguette.

Tomato Basil Bruschetta

I absolutely love tomatoes, they are my most favorite vegetable. I can eat them fresh out of the garden like an apple, sliced on top of things, cooked, stewed and more. Like literally, every way you can eat a tomato, I’ll do it. I love them that much!

For the past several years I’ve grown a garden…which honestly consists only of tomatoes and basil plants. I’m not joking!

These tomato basil bruschetta bites would be the perfect food for a picnic! Make everything ahead of time, pack into containers (keep the bread and tomatoes separate until ready to serve) and enjoy! They would go great with my grilled caprese zucchini roll-ups and banana split kabob sticks for dessert!

In a medium sized bowl, mix together tomatoes, garlic, basil, extra virgin olive oil and salt and pepper.

In a large skillet, heat EVOO and toast bread until slightly browned and crispy.

Top the crispy bread or baguette with the tomato mixture.

Tomato Basil Bruschetta

I’m telling you this is so so so good! I really am afraid to admit how many pieces I ate myself. I honestly just couldn’t’ stop!

I loved it just the way it was with just tomatoes, basil, garlic, EVOO, balsamic vinegar and salt and pepper, but you could easily add mozzarella pearls to each slice of bruschetta and really take the flavor to the next notch!

Bread

  • Slice a French loaf or baguette into 1/2" thick slices
  • Drizzle extra virgin olive oil in a skillet and heat over medium heat. Add bread slices and toast on both sides
  • Once golden brown on both sides, place on a platter and set aside

Tomato Basil Topping

  • Cut cherry tomatoes in half
  • Peel and cut garlic very thinly
  • Wash and rough chop fresh basil
  • Cut mozzarella pearls in half or quarters
  • In a bowl, gently toss tomatoes, garlic and basil. Season with salt and pepper to taste

Arrange

  • Using a spoon, ladle the tomato basil topping onto each bread slice
  • Drizzle with balsamic vinegar
  • Serve and enjoy
