In today’s recipe, I’m sharing how I made pumpkin-shaped mini bundt cakes using boxed carrot cake mix and canned cream cheese frosting. The flavors were delightful and the final product was oh-so cute! *be sure to see my video tutorial below!

But if you know me, I have a short attention span to things that take a long time…I like things that look complicated or hard but actually were super easy. These pumpkin cupcakes were just that! Seriously, they couldn’t have been any easier to make!

Pumpkin Bundt Cake Ingredients and Supplies

  • boxed carrot cake mix
  • canned cream cheese frosting
  • eggs
  • vegetable oil
  • water
  • yellow and red food coloring
  • piping bag and tip
  • mini silicone bundt pan

Instructions: Pumpkin Mini Bundts with Cream Cheese Frosting

1) Mix and bake mini bundt cakes using cake mix

Prepare the boxed cake mix with eggs, oil, and water, then bake in silicone mini bundt pans according to package directions.

2) Tint cream cheese frosting orange with food coloring

Stir red and yellow food coloring into canned cream cheese frosting until it reaches a bright pumpkin orange.

3) Assemble and frost the cakes to look like pumpkins

Spread or pipe frosting between two mini bundt cakes, stack them together, and cover the outside with orange frosting.

4) Add a cinnamon stick stem for the finishing touch

Place a cinnamon stick in the center hole to create a realistic pumpkin stem.
