I love bread. Like love love love bread. There’s something just so comforting about a slice of warm, buttered bread with a hot cup of coffee. It makes everything right in the world.

I literally feel a sense of peace, just sitting back and enjoying those delicious carbs! P.S. If it’s warm blueberry butter, it’s even better!! …and if you’re trying to avoid carbs at this time, you can add blueberries to this low-carb almond flour bread!

If you’ve been following along with my kitchen renovation progress updates, then you’re familiar with our double freezer drawer debacle. In an effort to clear out the few items we had in the freezer, I had a bag of wild blueberries that needed to be used up. So, I hopped on the ol’ Pinterest machine and found a recipe that I could use for blueberry oatmeal bread from Celebrating Sweets.

Mixing up a few ingredients, plopping them into a pan and sending it into the oven with a kiss, is one of my favorite dishes to make. I mean, what’s not to love about a 1 dish meal? haha…yes, don’t be fooled, bread can definitely be considered a meal!

Tips

  • If you are using frozen blueberries, like I did, place them in a strainer/colander and run cold water over top of them to defrost
  • Remove the blueberries from the strainer/colander and pat dry with a paper towel the best you can
  • Once the main batter is mixed together, spoon in dry blueberries and carefully stir with a spatula until the blueberries are evenly distributed in the batter. Avoiding breaking/piercing the blueberries to avoid having your batter turn blue

Making different homemade breads, is one of the easiest ways to sneak in ingredients that your otherwise picky eaters may not eat! Add in a scoop of healthy greens, or protein powder and you’re on your way to an even healthier bread! What are some sneaky ingredients you have snuck into recipes before? I promise, I won’t tell!!

Ingredients
  

Instructions
 

  • Preheat oven to 350°F and grease a 9×5 loaf pan
  • In a large bowl, mix together brown sugar, milk, applesauce, oil and eggs
  • In another bowl, combine both flours, 1 cup oats, baking powder, cinnamon and salt
  • Add the dry ingredients to the wet ingredients and stir until combined
  • Stir in blueberries
  • Pour batter into prepared pan. Sprinkle extra oats on top of the batter
  • Bake for 35-45 minutes. The bread is ready when you insert a toothpick or butterknife and it comes out clean

Homemade loaves of bread make excellent gifts! Wrap up the freshly baked (but cooled) blueberry oatmeal loaf bread in brown butcher paper.
