Toasted Avocado Sandwich

Toasted Avocado Sandwich
Ingredients
- 2 slices bread
- 1 avocado
- 1/4 tsp kosher salt
- 1 slice provolone cheese
- 1 slice tomato
Instructions
- Peel and pit the avocado. Use a spoon to scoop out the green flesh and place in a bowl
- Add 1/4 tsp of kosher salt to the avocado and mash
- Toast two slices of bread either in a toaster or in a skillet
- Spoon the mashed avocado onto one of the slices of toast, top with a slice of cheese and tomato and the remaining piece of toasted bread
- Serve and enjoy!

For the days I do eat lunch, I like to keep it light. That’s how I came up with this toasted avocado sandwich. I actually made this recipe back in 2012 and snapped all of these photos way back when, but never shared it on this ol’ blog!
But as I’m going through old memory cards, I’m finding hundreds (no joke) of recipes and DIY projects that I have created but didn’t have time to write a blog post for. So, today, I’m checking one of those recipes off of the list and moving those 12 year old photos off of the memory card! Woot!
Ingredients
- rustic or hearty bread – I loooove a good bread. Choose a bread that toasts well and is firm and crunchy when eating!
- avocado – find an avocado that is slightly soft to the touch if you were to squeeze it. You don’t want the avocado to be too hard or firm because the flavors won’t be ready (it’s not ripe, think along the lines of a banana)
- cheese – I chose to use provolone cheese because it’s mild in flavor but delicious in taste and melts extremely well
- tomato – a thick, juicy slice will do!
Let’s Make It Together!
