Recipe Inspiration
To me, pot roast with potatoes, onions, carrots, celery, green beans and sometimes corn, is a classic comfort food. Growing up, my mom often made pot roast in her electric skillet in the wintertime. To this day, it is still one of my dad’s most favorite meals.
It’s such a hearty, rich in flavor and filled with nutrients type of dish that is relatively easy to make. It’s the perfect “put meat on your bones” type of recipe! —> which is great for those cold winter nights when all you want to do is eat something warm and snuggle up with a fluffy blanket and watch TV.
I have made pot roast an uncountable amount of times since getting married…however, the funny thing is, my husband is not a fan of it! HAHA! He complains that he had it too much growing up so now he doesn’t want it anymore! … I’m such a nice wife, I keep making it over and over! 😂 … because our kids like it! And, hello, if you’re a mom, you know that when you finally find a meal that your kids like, you will make it until the cows come home!

When our kiddos were younger, we used to call this pot roast recipe “alligators and carrots”. Yep! Alligators and carrots! Somewhere along the lines, either one of the kids or myself referred to the green beans as alligators and it just stuck! So, this classic pot roast and veggies recipe has a sentimental meaning to me every time I make it!

Ingredients
- chuck roast – for my family of 5, a roast around 2.5 pounds works well
- baby carrots – I just like these more than large carrots that I have to peel and cut
- green beans – wash and cut off the ends
- onion – peeled and cut into quarters
- potatoes – I love to use the small potatoes in the bags like in the image below rather than peeling and cutting russet potatoes
- celery – cut off the ends and dice into 1″ slices
- beef consommé – this can be found in the soup isle of grocery stores near the canned soup

Here’s a close up shot of the meat, for years I had to call my mom and ask her which type of meat I needed when I was at the grocery store! 😂

Step-By-Step
- In a skillet, heat extra virgin olive oil
- Sear chuck roast on both sides
- Prepare vegetables
- Place roast and vegetables in the large crock pot
- Add beef consommé
- Cover and let cook on high for 4-6 hours (each slow cooker is different, mine cooks super slow)

Whenever I make this no-fuss meal, I always feel so accomplished! There’s something so nice about having a meal all ready to go in the evening and not having to spend my most busy time of the day trying to make dinner!

- 2.5 lb chuck roast
- 2 tbs extra virgin olive oil
- 1 c baby carrots
- 1 c green beans
- 1 bag small potatoes
- 3 stalks celery
- 2 cans beef consommé
Instructions
