Strawberry Blueberry Muffins with Chocolate Chips

These were amazing!!! Great way to use up fruit!
Ingredients
  • 1 cup soy milk
  • 1/3 cup unsweetened apple sauce
  • 3 tablespoons Earth Balance butter
  • 4 ripened bananas
  • 1 teaspoon vanilla extract
  • 2 cups all-purpose flour
  • 1 cup rolled oats
  • 1 cup packed dark brown sugar
  • 1 1/2 teaspoons baking powder
  • 1 teaspoon baking soda
  • 1/2 teaspoon pumpkin pie spice
  • 1/2 teaspoon salt
  • 1 1/2 cups fresh strawberries
  • 1/2 cup blueberries
  • 1 cup semi sweet chocolate chips (optional)
Instructions
  1. Preheat an oven to 400 degrees
  2. Mix the milk, applesauce, Earth Balance, and vanilla extract together in a bowl
  3. Mix the flour, oats, brown sugar, baking powder, baking soda, pumpkin pie spice, and salt in a bowl
  4. Pour the banana mixture into the bowl with flour mixture. Stir until just combined.
  5. Gently fold in the strawberries, blueberries and chocolate chips.
  6. Pour into muffin tins.
  7. Bake until cooked all of the way through about 10-12 minutes
