Day 7: Eating Vegan
My week-long journey of eating vegan. Recipes for Strawberry Blueberry Muffins with Chocolate Chips, and homemade salad dressing!

Today is day 7! We have made it one week eating Vegan and I am happy to report that we are all still alive and well and no one has starved to death! Woo hoo!! I will write up an overview tomorrow of our thoughts and feelings! But today I want to share with you our meals…two of which were eaten out! The breakfast muffins were another “creation on a whim” this morning and they are amazing! I could have eaten the whole batch in one sitting! (make sure you click the name for the recipe!)
Breakfast:

Lunch:
After we got home from church this morning we decided to go on a family walk. We walked to Jimmy John’s and ate. Lover Boy and I split their Veggie Club with no cheese or mayo (I’m not going to lie, it would have been a 1,000 times better with those two said ingredients!) Regardless, the club had avocado, sprouts, lettuce and tomato, oil/vinegar and oregano.
Dinner:

Wendy’s Baked Potato and Side salad – I help out at church on Sunday nights in the kids program and the kids come with me. On our way home I picked up Wendy’s and brought it home. Lover Boy and I each got a baked potato and side salad…the potato I loaded with Vegan alternatives (see picture below) and for the salad we used my favorite homemade salad dressing!
Lover Boy told me that “after not having meat for so long the veggies are really starting to taste different and better…this potato tastes amazing!” I totally agreed with him! It was great being able to eat out at local chains and still be able to enjoy a nice healthy meal.
