Day 6: Eating Vegan
My week-long journey of eating vegan. Recipes for Strawberry Blackberry Muffins with Chocolate Chips, Corkscrews with Golden Hominy, Mushrooms & Red Peppers, and Vegan Quesadillas with mashed avocado.

Day 6 rolled around and we were still going strong with eating totally vegan this far. I ate like a pig at lunch because it was so good. However, I really could not figure out what sounded good for dinner. After much contemplating I finally settled on Mexican.
