Cauliflower Mashed Potatoes
It’s easy to be fooled with these savory cauliflower mashed potatoes! Skip the carbs and calories for more nutrients!
My husband has really been watching what he’s been eating lately + I’ve been reading a book called “Wheat Belly” = we’ve been evaluating the food we typically eat.
I never really put much thought into potatoes being mostly all carbs and not having much nutritional value – I just thought of them as a vegetable. I grew up eating my mom’s mashed potatoes several times a week and absolutely loved them!
The other night my hubby stopped by the grocery store to pick up a couple of things I needed and he brought home a head of cauliflower – GAG! I reallllly am not a fan of cauliflower. My mom used to mix it in with broccoli and serve it with melted Velveta cheese…and even then I still couldn’t stand it. However, my husband suggested making the cauliflower into mashed potatoes. So I did! I made them exactly how I make regular mashed potatoes and OH MY GOSH were they delicious!!! I seriously loved them! My hubby loved them…and our kids LOVED them! They even asked for seconds! Whaaaat?!?!?! Yes! I’m being serious!

Here’s how I made them!
Boil water in a large pot. Once boiling, add cauliflower.
Drain cauliflower from water, add butter, a splash of milk and mix with electric beater. Season with salt and pepper to taste.
Ta da!! And there you have it! Enjoy!
- -1 head cauliflower
- -1/2 stick butter
- -1 splash of milk
- -salt and pepper
- Chop cauliflower into large pieces
- Add to large pot of boiling water, cook until soft
- Drain
- Add butter and milk
- Blend until smooth
- Season with salt and pepper to taste
Ooh, I’ll have to try these! I happen to love cauliflower, but what a great idea to make it into mashed potatoes! I bet my kids would like it too! Thanks for the great recipe. 🙂
