Roasted Vegetables

  • Preheat oven to 350°F
  • Prepare all vegetables by washing, deseeding, trimming and cutting
  • Arrange prepared vegetables on a baking sheet and drizzle with extra virgin olive oil. Season with salt
  • Bake in oven for 15-20 minutes, or until the vegetables are softened and slightly browned

Orzo

  • While the vegetables are roasting, bring a pot of water to boil. Cook orzo just as any other pasta noodle. When orzo is tender to the bite, drain water and leave covered in the pot until the vegetables are ready

Pine Nuts

  • While vegetables and orzo is cooking, in a small skillet heat 1 tbs extra virgin olive oil and toast pine nuts until slightly browned. Turn off heat and leave pine nuts in the skillet until ready to use

Serve

  • Plate orzo and top with a mixture of roasted vegetables and pine nuts

Recipe Inspiration

It’s the beginning of a new year and if you’re like me, you’ve set a goal of eating more healthy. Yay and ugh all at the same time! HA!

There are so many diets out there that scream no carbs, no sugar, no processed foods. While all of these diet plans have their benefits and purpose, I personally find them unsustainable. I can stick to the diet for one week max and then I I just simply can’t do it anymore and I binge eat more carbs and sugar in one sitting than you should consume in an entire week! Anyone else with me?

Like all things, consistency and moderation is where it’s at. I can attest to this because I used to do hard things – I ran long distance competitively for 10 years! And now, all these years later, I am seeing the benefit in both consistency and moderation rather than being over zealous or crazy with my running workouts! That’s where this recipe for orzo and pan roasted vegetables stemmed from. The goal of eating more veggies and being more mindful with the amount of carbs I indulge in, rather than banning them from my life!

Roasting The Vegetables

  • Preheat oven to 350°F
