Prepare all vegetables by washing, deseeding, trimming and cutting
Arrange prepared vegetables on a baking sheet and drizzle with extra virgin olive oil. Season with salt
Bake in oven for 15-20 minutes, or until the vegetables are softened and slightly browned
Orzo
While the vegetables are roasting, bring a pot of water to boil. Cook orzo just as any other pasta noodle. When orzo is tender to the bite, drain water and leave covered in the pot until the vegetables are ready
Pine Nuts
While vegetables and orzo is cooking, in a small skillet heat 1 tbs extra virgin olive oil and toast pine nuts until slightly browned. Turn off heat and leave pine nuts in the skillet until ready to use
Serve
Plate orzo and top with a mixture of roasted vegetables and pine nuts
