Homemade Pancake Mix

This homemade pancake mix doubles as a homemade waffle mix! Mix the batter and use in a heated pan with butter to make pancakes, or use a waffle iron to make homemade waffles!

This pancake batter mix can be stored in the refrigerator up to 2 days in a sealed in an air-tight container.

I grew up not liking pancakes. I was the only one in my family who didn’t like them. My mom makes “killer” pancakes so others claim, but I always thought they were gross. She used Aunt Jemima pancake mix and doctored it up. Don’t ask me what she did, because I really have no clue. I just know I never liked them! 🙂

Alison was my college Cross Country and Track teammate, roommate and then bridesmaid. Her family lived close to the University (of Toledo) unlike mine which were 5 hours away. I occasionally would go to her house for breakfast on weekend mornings when we were not racing. Her mom would make pancakes. Pancakes that were soooo good! I always looked forward to Mrs. Tittle making them! Of course I got the recipe before I graduated so I could make them for Lover Boy.

After Little Finch was born my mom came down for a couple of months once I went back to work. We made these pancakes waaay too many times while she was here. She LOVED them and took the recipe home!

Every time I make these (and it’s been 5 years now) I feel compelled to text or Facebook message Alison and tell her that I’ve just made her mom’s pancakes. Weird, I know. But I think they taste better remembering my good friend and her awesome family! 🙂

Want to make these as well?

Start by heating a large skillet

In a small bowl add 1 1/4c flour, 1tbs sugar, 3tsp baking powder, 1/2tsp salt

(One time in college when Lover Boy’s and my little brothers came to visit us I made these pancakes…except I accidentally put in baking soda instead of powder. It was beyond disgusting. Lets just say my brother and future brother-in-law didn’t let me live it down for quite some time. Punks! So don’t be like me and pull a switch-a-roo of ingredients!)

In another bowl mix together 1c milk and 1 egg

 

Add 1/2tbs vegetable oil

 

Mix with fork

 

Add milk mixture to dry ingredients

 

Mix with either a fork or electric mixer

 

Pour out onto hot skillet. (You can add chocolate chips, blueberries, strawberries, whatever you want at this time) Once they start to bubble flip them over

 

Top with butter and your favorite syrup

 

Laughing Coyote loved his first pancakes! Little Finch ate two whole pancakes! (amazing!!!)
