Eggplant Parmesan

I recently bought an eggplant but had no specific plans of what to make with it. In a late minute attempt to use it before it went bad (do you ever do this?? or is it just me?!?) I made Eggplant Parmesan for lunch. I have never made Eggplant Parmesan so I was experimenting on this one! Good thing I did!…Lover Boy, who claims to not like eggplant LOVED this meal and told me to make it again real soon!

Eggplant Parmesan

Here is how I made it…

Slice eggplant - not too thick, not too thin
Beat an egg in a shallow but wide bowl
Make an assembly line - Sliced eggplant, egg dip, breadcrumb bowl
Heat 1tbs of EVOO in skillet
Dip eggplant in egg
Let excess egg drip off
Cover with breadcrumbs - I found that it was easiest to set the eggplant in the bowl and sprinkle the breadcrumbs over it rather than dipping it
Fry in EVOO...
Until golden brown
Serve over noodles and top with your favorite spaghetti sauce!

Ingredients:

-1 Eggplant

-Breadcrumbs (Italian, Regular, whichever you prefer. I used regular)

-1 Egg

-1 tbs EVOO

-Noodles

-Spaghetti Sauce
