For today’s recipe, I decided to use up some fresh avocados I had laying around in my kitchen begging to be used!
I cooked up a batch of ground beef and seasoned it with my Homemade Taco Seasoning Packet. I then sliced and pitted the avocados and filled them as if they were taco shells. I did have enough ground beef left over to make traditional tacos in case my son wanted those!
How To Make Stuffed Avocado Bowls
Preheat the oven to 350°F
Step 1: Brown 1 pound of ground beef and season with your favorite taco seasoning blend

Step 2: Cut avocados in half and remove pits. Place on a parchment lined baking sheet

Step 3: Fill avocado bowls with ground beef, shredded cheddar cheese, and tomatoes. Bake in the oven for 5 minutes to melt the cheese

Step 4: Arrange stuffed avocados on a platter and serve!

Optional: Top each avocado taco bowl with shredded lettuce and sour cream to make it more like a real taco!

Recipe Review
If you’re an avocado lover and a taco lover, then you will love these stuffed taco bowls. We all thought they were super good…but didn’t absolutely love the avocado being warm from being baked in the oven.
When I make these again, I will omit baking them in the oven and instead serve them at room temperature. Then they’ll be perfect!

- 1/4 c shredded cheddar cheese
- 1 tomato diced
- shredded lettuce
- dollop of sour cream
Instructions
- Preheat the oven to 350°F

Sounds interesting. You could melt some queso to drizzle on avocado instead of putting in the oven. Maybe mix salsa in with queso.
