I recently shared a recipe for poached apples. Truth be told, I had never heard of poached apples. When I think of poaching, I think of eggs. But apples – wowza! Let me tell you, this is something you will want to try!

While the apples are cooking, combine ricotta cheese and honey in a medium sized bowl. Stir until combined and then refrigerate until ready to use.
Toast your favorite type of bread in the toaster to your preferred doneness.
Liberally spread the ricotta cheese on the toast, and then layer with poached apples. Spread more ricotta cheese on top of the apples and sprinkle with ground cinnamon.

- 2 c water or more to cover the top of the apples
- 1/2 c ricotta cheese
- 2 tbs honey
- 2 slices toast
