We have been living summer up to it’s fullest degree!

We kicked off summer before the school year ended with my brother’s wedding and then my hubby and I jetting off to Italy. When we came back we had three days before pulling our kids early from school to get a head start on our 2 week summer vacation out west (where our kids checked off their 44th state!)

Since then, we’ve had many camping trips in Wisconsin, many day trips to various lakes and other towns nearby, and many trips to visit family out of state. All mixed in with the fifty billion things that go on in real life at home! Baseball practice and games, horseback lessons and competitions, golf, fishing, swimming and so much more!

It’s been a busy summer, but for once, I’m actually sad that summer will soon end (well, technically in September, when my kids go back to school).

As a kid growing up, I always loved summer, but 100% looked forward to going back to school. School was such a fun social place for me! I mean, why would I rather be at home than at school hanging out with my friends all day long? (even if it meant having to be in class!)

While I haven’t shared much of anything on this ol’ blog since the summer began, rest assured that I’ve completed a trillion projects and baked a gazillion new recipes…all waiting for me to share with you!

Yesterday, in between running my kids to different places and trying to pack for a couple day trip to Illinois, I decided it was the BEST time to use up some plums that I had that were starting to get super soft.

Yes, I absolutely have an issue with being distracted doing things that really don’t matter at the moment when I’m supposed to be doing something else! I just can’t help it!

Anyway, I quickly googled “plum tart recipe” and found a photo of a tart that looked super good. So, without a recipe to follow, I got busy making my own version of said beautiful plum tart! (normally I would make a homemade fresh purple plum pie, but felt like something different!)

…and you guys, it was soooo good! Let me tell you about it!

Ingredients Needed

  • fresh plums – make sure you use ripe plums otherwise they may not be as sweet.
  • store-bought pie crust – Pillsbury is my go-to. I literally always have a store-bought pie crust in my refrigerator because I use it for so many things, like my favorite broccoli quiche recipe!
  • cream cheese – I’m a brand snob, and only like true Philadelphia cream cheese. It’s worth the little extra that it costs!
  • sugar – granulated, white sugar
  • vanilla extract – use a real vanilla extract, not an imitation extract (you have to look at the label)

For this recipe, I was in a super big hurry and did not measure anything. However, the quantities that I will provide below, are based off of my guesstimates of what I used. Feel free to add a little more sugar if you feel it needs more sweetness!

How To Make A Plum Cream Cheese Tart

 In a bowl, mix cream cheese

Roll out store-bought pie crust onto a baking sheet lined with tin foil

Arrange sliced plums on top of cream cheese

Fold in pie crust edges and brush pie edges with water using a silicone brush

  • In a bowl, mix 4oz cream cheese and 1/8 c granulated sugar
  • Add in 1 tsp vanilla extract
  • On a baking sheet, roll out 1 premade store-bought pie crust
  • Spread cream cheese topping on pie crust
  • Arrange sliced plums on top of cream cheese 
  • Fold in pie crust edges
  • Brush pie edges with water
  •  Bake at 425 F for about 25 min
