I decided last minute last night that I wanted pizza. However, I didn’t have any dough and hardly had any toppings. Here’s what I came up with.
Homemade Pizza Dough: I found this recipe on allrecipes.com by Valentino’s.
Add sugar to warm waterAdd yeast to sugar and water. Let dissolveOnce the sugar and yeast are dissolved it should look like this…no clumpsAdd dissolved mixture to mixing bowl (I used my dough hook for this) and add EVOOThen saltSlowly add the flour *don’t over mix
While I was mixing look who rolled in to say hello!! Lover Boy surprised all of us with this new walker tonight. “Boys need toys without pink on them!” he proclaimed
Here’s the yummy dough. Now let it chill in the fridge for 10 minutesI kneaded and shaped the dough on a floured surface with oiled hands…and then threw in a few humiliating pizza tossing moves…not so pretty! That’s why you won’t be seeing them on here! Good thing I never worked at a pizza shop!I prebaked my crust at 425 degrees for 10 minutes (recipe didn’t call for this though)These were the ingredients I had…quite the selection, eh? (that is pesto sauce in the jar not moldy tomato sauce) 🙂Diced up heirloom tomato…but because it was soooo juicy I strained in first because I didn’t want a soggy pizza
I diced the tomatoes and jalapeno on the same cutting board and of course ate a huge chunk of tomato…well it was SUPER spicy and I yelped (literally!) Little Finch heard me and thought I cut my finger so she came over and insisted on kissing it AND told me to be careful. Then she went to her kitchen and brought back over a tomato and knife and told me to watch her. She said “cut careful”. Move fingers. Don’t cut fingers”…AWW my little mommy!
I topped it with parmesan cheese before baking to help soak up any extra juice from the tomatoes…and this is what it looked like once it was baked!
I had my doubts about this pizza simply because of the toppings I had to choose from (it is unheard of for Lover Boy to eat pizza without meat). But guess what??? HE LOVED THIS PIZZA! He said “it was a nice change up and the crust wasn’t greasy at all!”
Stir water, sugar and yeast together until dissolved. Add the olive oil and the salt. Stir in the flour until well blended. Let dough rest for 10 minutes.
Pat dough into pan or on to a pizza stone using fingers dipped in olive oil. If desired sprinkle basil, thyme or other seasonings on crust. Top with your favorite pizza toppings and bake for 15 to 20 minutes in a preheated 425 degree oven.
