Meat (& Veggie) Pie

Lover Boy and I are quickly approaching our 5th wedding anniversary so I thought I’d make one of the 2 dishes I knew how to make for the first 3.5 years of marriage, meat pie! I actually learned this from his mom back when we were dating. It tasted good, was simple and I could remember how to make it without having to call her and ask every single time.

LB and I call this meat pie but really it should be called “whatever you have in your fridge baked into a pie crust”. The great thing about this is you can honestly add in whatever you would like or whatever is about to go bad in your fridge. Don’t mind the pictures again, this getting dark business is really taking a toll on my photos. I suppose I really do need to pull out that fancy dancy flash LB bought me for Mother’s Day and figure out how to use it!

Honestly this is so easy and quick to make! Little Finch and Laughing Coyote made it almost by themselves!

Brown 1/2lb ground beef and season with 1tbs Italian Seasoning and salt and pepper (yes my 3 year old is really using the stove…she cooks all.of.the.time on it!!!)

Grab whatever veggies you want to use, I used: 1 yellow squash, 1 zucchini, 1/2 green pepper (depending on the size I may use the whole thing), a handful of spinach and a handful of carrots (to be honest I had never used spinach or carrots before but it was good!) I usually use cucumber and it is honestly like the secret ingredient that I discovered several years ago. LB was actually really disappointed that it wasn’t in the pie tonight!

Throw your veggies into your food processor and chop them up (don’t make them like a paste though)

In a large bowl mix together all of the veggies (yes today was a stay in your jammies day!)

Add in one can DRAINED diced tomatoes

Stir in the browned beef

and 1 to 1 1/2c grated cheddar cheese

Line a pie dish with a pre made pie crust

Dump in all of your ingredients. Feel free to sprinkle on more cheese at this step too…the more cheese the better in my opinion!

Top with another pie crust and seal the two together

Using a knife poke air holes (and then allow your children to take their fingers and poke all over! or not!) and bake at 375Ā° for 25-30 minutes

Ta da! Laughing Coyote kept sprinkling cheese overtop of the pie before we baked it so that’s what the specks are all over!

Slice it up just like a pie! There will be a little bit of juice from the veggies and that is ok!

  • 1/2 to 1lb ground beef
  • 1tbs Italian Seasoning and salt & pepper
  • 1 zucchini
  • 1 yellow squash
  • 1/2 of a cucumber
  • 1/2 to 1 whole green pepper
  • 1 can drained diced tomatoes
  • 1-2 c grated cheddar cheese
  • 2 pie crusts
  • whatever other veggies you want!
  1. Preheat oven to 375 degrees
  2. Brown beef and season with Italian Seasoning, salt and pepper
  3. Using a food processor chop up all of your veggies
  4. Combine veggies, canned tomatoes, beef and cheese in a large mixing bowl and stir
  5. Line pie pan with 1 crust and fill with meat and veggie mixture. Top with more cheese (optional)
  6. Cover with remaining pie crust and seal edges together
  7. Bake for 25-30 minutes

If you look closely in the first picture you can see a white extension cord to the left of the fireplace. One day I will have an outlet by the mantel. Anyhoo, hope your day is grand.
