Finding alternative recipes and foods for the food items you love isn’t always easy.

When my husband and I were completing our 7-day cleanse, we decided to ease back into “normal” food by having a family pizza night with cauliflower pizza crust, homemade pizza sauce and vegan cheese for the topping {we made regular pizza crust for the kiddos}

While I will never say that cauliflower pizza crust is amazingly delicious {I’m from Chicago – in my mind, pizza should all be deep-dish and eaten with a fork and knife!} it is a good, healthy alternative when you are craving pizza but wanting to be more mindful.

Making homemade cauliflower pizza crust is easy and only takes a little bit of prep time. Cauliflower is an extremely healthy alternative to regular flour pizza dough because it is gluten free.

Ingredients

Very little is needed to make homemade pizza crust! I prefer to use riced cauliflower rather than a head of cauliflower that you steam and then cut into really small pieces.

Let’s Make It Together!

Start by defrosting the bags of riced cauliflower. Place in a mesh strainer and drain any water

It may be necessary to hold small amounts of cauliflower in your hand and squeeze tightly to drain any excess water. Use a cheesecloth to be more graceful 🙂

In a large bowl add egg and spices

Ingredients
  

  • 2 -10 oz bags riced cauliflower
  • 1/2 c Parmesan cheese
  • 1/2 tsp italian seasoning
  • 1 tsp kosher salt

Instructions
 

  • Preheat oven to 425° F
  • Drain riced cauliflower – squeeze all of the excess water out
  • in a large bowl whisk egg, Italian seasoning and salt
  • mix in parmesan cheese and cauliflower
  • press cauliflower mixture into a round pizza pan
  • bake cauliflower crust at 425° F for 12-15 minutes until it's slightly browned
  • remove from oven and add toppings
  • return to oven and bake for 10-15 minutes – or until thee desired "done-ness" has been reached

Fig & Arugula Pizza

I had a craving for a sweet and savory pizza – odd, I know. But figs and arugula {usually with goat cheese} is seriously amazing! I had all of the ingredients on hand – but opted to use vegan mozzarella cheese instead of goat cheese.

I sliced the figs lengthwise

Next, I topped the pizza with the mozzarella cheese, figs and arugula and baked for 10-12 minutes at 425° F
