My son’s preschool planned an Easter egg hunt party, so I offered to bring in a fun and festive Easter snack. In the past, I used to make cupcakes for special occasions (p.s. now I’m crying because this post was from 2011!!! My babies are so old now!) But after years of making goodies for my kid’s classrooms, I have realized that decorated sugar cookies for Easter are a much better option! They are easy to transport, less messy than cupcakes, and perfect for little hands at preschool Easter parties.

This Easter Egg Sugar Cookie recipe is easy to make using simple ingredients like flour, sugar, butter, eggs, and vanilla, topped with customizable royal icing for a fun and festive treat perfect for any Easter celebration!

  • Hand held Mixer with whisk
  • 4 cup Pyrex measuring cup
  • Piping bag and tips

Ingredients
  

Sugar Cookies

Royal Icing

Instructions
 

Sugar Cookies

  • In a small mixing bowl cream together butter and sugar until fluffy
  • Add vanilla and egg
  • Sift dry ingredients together and add to cream mixture
  • Chill dough thoroughly before rolling out and cutting with cookie cutters
  • Bake on lightly greased sheet 400°F degrees 8-10 minutes (possibly less depending on oven. Do NOT let brown)

Royal Icing

  • Separate egg whites from yolks
  • Place egg whites into a mixing bowl
  • Mix eggs until fluffy and airy
  • Add in vanilla extract
  • Mix in powdered sugar
  • Mix until icing reaching a consistency of toothpaste *don't over mix
  • Add food coloring
  • Place in piping bags and decorate sugar cookies

Notes

💡 Pro Tip: Rather than making multiple batches of royal icing, simply divide one batch into smaller bowls and mix in your desired food coloring for a variety of colors!
💡 Pro Tip: For perfect cookies, bake on a lightly greased sheet at 400°F for 8-10 minutes, keeping a close eye on them—remove before they start to brown for the best texture!
